Pork cider croquettes

1 to 1.5kg pork shoulder slow cooked for 7 hours in a bottle of cider with bay leaf and thyme and then pulled.  Make a cup of mash potato. Thermomix is great. Add 100g parmesean grated to mash.  Mix mash and pulled pork (drained) and 2 eggs.  Make pork balls and then crumb them.  I make my own crumbs from 2 slices of bread in the processor but you can buy them. Shallow fry the croquettes in oil.  Delicious with salad or in a bean bowl for brunch.... or just as they are ! Enjoy
